Even if you don't care about mythic raiding, it's best to choose a realm that's very populous for your chosen faction unless you're joining a friend who's on a different sort of realm. Population is definitely low, however a single character can learn all professions in the game (blacksmithing, alchemy, skinning, etc.) instead of having a cap.
